Vegan Alkaline Donuts with Chocolate Frosting
Ingredients
- ¾ cup spelt flour
- ¼ cup sugar
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 2 tablespoons ground flaxseed soaked in 1 tablespoon alkaline water for a few minutes
- 1/3 cup unsweetened almond milk
- 1 tablespoon grapeseed oil
- 1 teaspoon vanilla extract
For the Frosting
- 2 tablespoons vegan chocolate chips melted with 1 tablespoon unsweetened almond milk
- Unsweetened shredded coconut
How to Prepare
Preheat your oven to 375 degrees F. Combine the dry ingredients and mix until evenly distributed. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined. Spoon the mixture into the donut pan until completely used up. Drop the pan gently on your counter to make any air bubbles rise to the surface of the donuts. Bake the donuts for 8 minutes.
Let them cool slightly in the pan, then remove them carefully to a cooling rack. Melt the chocolate chips in a microwave or stovetop, making sure not to burn the chocolate. Stir in the 1 tablespoon almond milk and stir well to combine. Spread the frosting on the donuts and sprinkle with shredded coconut.
